This is one of the hardest things I’m finding over lockdown – coming up quick, easy lunch ideas that aren’t the same EVERYDAY! We’re not inventing the wheel here at all, but we shared this with each other on our most recent Zoom – and you know what? It was really useful! I’m stuck in a rut of snacky plate and I just don’t have the brain width to come up with any other ideas. So we went straight to the horses (figuratively speaking – kind of!) mouth and found out what their favourite lunches were. So here you have it – Mini Mumblers favourite lunch ideas!
Ida’s Omlette
Seriously easy and add whatever you like! A couple of eggs whisked up and some grated cheese and you’re away! Ida loves getting involved with making lunch, so she has the job of whisking up the eggs! She’s also quite picky so letting her choose what fillings she wants makes lunch times way easy. Ham and mushroom is flavour of the month at the moment!
Theo’s Cheesy Pasta
Plain and simply but Theo loves it, and you can easily add veg or meat if you want. Cook some pasta and make a cheese sauce with butter, milk and flour – add loads of cheese at the end to make it extra cheesy! We usually stir in some spinach at the last minute to make sure he gets some veg in him!
Esme’s Snacky plate
Seriously – this is what has got us through lockdown so far! I’ll do her a little sandwich, or a sausage roll on a plate, with a piece of cheese, some cut up veg (usually carrots or cucumber), some fruit, some crisps and a packet of raisins. I don’t know what it is about a snacky plate – but she’ll eat it all, if i give her any of those things separately I’ll be lucky if she takes more than a few mouthfuls! As I said, we’re not inventing the wheel here at all!
Eddie’s Pitta Pizza
Friday lunch is Pitta Pizza day at Eddie’s! So easy, and a great way to get some veg in the little dude! Grill a pitta bread, add some tomato puree, any toppings you like – we usually make little faces with peppers and ham, lots of cheese and back under the grill!
Some other fab suggestions we had were toasted wraps, jacket potatoes and good old beans on toast!
